Flourless Chocolate Cake Recipe

Almond and Chocolate Torte


I had been meaning to try this flourless chocolate cake recipe for a while. It is officially known as a chocolate torte. The official definition of a torte is a cake that is made with eggs, sugar, and ground nuts instead of flour.



In this recipe we use ground almonds instead of flour. The almonds are ground really finely like granulated sugar. If you are making your own ground almonds then consider toasting the blanched almonds first as this intensifies the almond flavour and stops it from clumping as you grind them in the food processor. Serve warm with crème fraiche or mascarapone cheese.

Flourless Chocolate Cake Recipe

  • butter, for cake tin
  • flour, for cake tin
  • 10 eggs, separated
  • 275g / 9 oz sugar
  • 250g / 8 oz chocolate chips
  • 280g / 10 oz ground almonds
  • 5ml (1tsp) cinnamon
  • juice and zest of 1 lemon
  • 90ml (6Tbsp) Van der Hum liqueur
  • 50g sugar
  • icing sugar, to serve

Making Almond Chocolate Torte

  1. Preheat oven to 160 C.

  2. Butter and flour a 24cm cake tin.

  3. Beat together the egg yolks and sugar for approximately 10 minutes, until thick and creamy.

  4. Add the chocolate chips, almond flour, cinnamon, lemon zest, lemon juice and liqueur. Beat until just combined.

  5. In a clean dry bowl, beat the egg whites with 50g sugar until stiff.

  6. With a metal spoon, carefully fold the egg whites into the torte mixture.

  7. Pour the mixture into the cake tin and bake for 1 hour. Sprinkle with icing sugar and serve.
