Awesome Chocolate Cupcake Recipe

Mint Chocolate Cupcakes

Iím a choc-mint fan so this Mint Chocolate Cupcake Recipe is often used for making delightfully beautiful, minty cupcakes.

Of course the melted mint chocolate in the middle of the cake is just yummy and the frosting delicious. Decorating the choc mint cupcakes is fun. You can use a mint leaf or chocolate shavings. My favourite way is to top the frosting with white chocolate shavings and then the mint leaf. This recipe makes: approximately 18 cupcakes

Chocolate Cupcakes Ingredients

  • 2 cups (300g) all-purpose (plain) flour
  • 1/2 cup (75g) unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda (bicarbonate of soda)
  • 1/4 teaspoon of salt
  • 2/3 cup (165g) butter, softened
  • 1 1/2 cups (300g) granulated sugar
  • 3 large eggs
  • 3/4 cup (200ml) milk
  • 1 teaspoon peppermint extract
  • as many chocolate cream after-dinner mints as you need to put one in each cupcake before baking.

    Chocolate Frosting Ingredients

  • 6 oz (180g) semi-sweet dark chocolate, coarsey chopped
  • 1/2 cup (125g) butter
  • 1 teaspoon peppermint extract

To Make The Chocolate Cupcakes

  1. Preheat the oven to 350 F (180 C/gas 4).
  2. Line 18 muffin-pan cups with foil or paper liners.

  3. Mix the flour, cocoa, baking powder, baking soda, and salt in a large bowl (put it all through the sieve).

  4. Beat the butter and sugar in a large bowl with an electric mixer at high speed until creamy.

  5. Add the eggs one at a time, beating until just blended after each addition.

  6. With mixer at low speed, beat in the mixed dry ingredients, alternating with the milk and peppermint extract.

  7. Spoon the batter into the prepared cups, filling each one two-thirds full.

  8. Sink an after-dinner mint chocolate into the batter of each cupcake.

  9. Bake for 20--25 minutes. Most recipes say the cupcakes are done when a toothpick inserted into the centre comes out clean but in this case we have a melted chocolate in the middle so a toothpick is not going to come out clean.

  10. Cool the cupcakes on wire racks.

    Chocolate Frosting


  11. Melt the chocolate and butter in a double boiler over barely simmering water. Stir in the peppermint extract.

  12. Drizzle the frosting over the cupcakes and decorate with the mint leaves or chocolate shavings.
