Decadent Chocolate Sponge Cake with Fudge Frosting

I enjoy coffee shop hopping and trying out their chocolate cakes and cappocinnos - this Chocolate Fudge Cake Recipe really hits the spot though for home baking.



The best part though is the chocolate fudge frosting (recipe below). By the time I've finished icing the cake and licked the spoon, I can't manage eating the actual cake. Some variations I like to make are adding a tablespoon of Grande Marnier to the fudge icing or using chocolate ganache instead of fudge icing. Enjoy this chocolate cake with special friends.

Chocolate Fudge Cake Ingredients

  • 160g butter or margarine, softened
  • 350g sugar
  • 2 eggs
  • 5ml vanilla essence
  • 90g dark chocolate, melted
  • 300g cake flour
  • 7ml bicarbonate of soda
  • 3ml salt
  • 300ml cold water

    Chocolat Fudge Frosting Ingredients

  • 100g dark chocolate
  • 400g sifted icing sugar
  • 60ml hot water
  • 1 egg
  • 120g softened butter or margarine
  • 5ml vanilla essence

How To Make Chocolate Fudge Cake

  1. Preheat the oven to 180 C / 350 F / Gas 4

  2. Grease and flour (or use cocoa powder) 2 x 23cm cake pans

  3. Melt the dark chocolate in a double-boiler or carefully in the microwave

  4. Cream butter, sugar, eggs and vanilla until light and fluffy.

  5. Blend in melted, cooled dark chocolate.

  6. Sift dry ingredients together and add to the creamed mixture alternately with the cold water, beating well after each addition.

  7. Divide the chocolate cake mixture between the cake pans and bake for 30 to 35 minutes. Turn out on wire racks to cool. Sandwich together and decorate with chocolate fudge frosting / icing.

Chocolate Fudge Frosting Recipe Instructions

Melt the dark chocolate over a double-boiler. Beat in the sifted icing sugar and hot water. Beat in the egg and softened butter or margarine, mixing well. Stir in 5ml vanilla essence. The chocolate fudge mixture will be thin. Place the mixing bowl over another bowl filld with ice - this is to help the fudge to thicken. Beat the fudge over the bowl of ice until the icing / frosting has reached a spreading consistency.
