I love almonds and I love chocolate so an Almond
Chocolate
Cheesecake Recipe is a great invention. The second time I
made it, I
added a tablespoon of coco powder to the base ingredients. The Amaretto
liqueur adds a gourmet touch to the cheesecake and it makes a perfect
pudding for a elegant dinner party.
Almond Chocolate Cheesecake Ingredients
- 1 1/2 cups crushed almond macaroons
- 1/4 cup melted butter
Pulse the biscuit crumbs and butter together in a food processor. Press
the biscuit mix into a 20cm springform pan to make a base. Make sure
the base is even. Chill the base in the refrigerator while preparing
the Chocolate cheesecake filling.
For the chocolate almond cheesecake filling:
- 3 eggs
- 1/2 cup castor sugar
- 500g smooth cottage cheese
- 1 cup sour cream
- 200g dark chocolate (best quality makes better cheesecake)
- 1/2 cup toasted ground almonds
- 2 tablespoons Amaretto liqueur
Melt the dark chocolate in a double boiler or in the microwave.Beat the
cottage cheese to soften slightly then add the eggs, sugar and cream
beating until smooth. Beat in the melted chocolate. Stir in the almonds
and liqueur. Pour the almond cheesecake mix into the chilled,
crumb-lined tin and bake at 150 C for an hour or until set but slightly
wobbly.
For the cheese cake topping (optional):
- 50g to 100g dark chocolate
- chocolate decorations or toasted flaked almonds
Melt the chocolate and pour over the cooled cheesecake. Decorate with
chocolate shavings or toasted almonds. Chill until serving.
